GLAZED FRESH STRAWBERRY FRITTERS

Lately, we have had an abundance of fresh strawberries from our garden, we eat the majority of our strawberries fresh from the garden. A few days ago I shared a simple strawberry smoothie, which tastes delicious and refreshing on a warm spring day. I usually add fresh fruits to my morning yogurt and loved the addition of fresh home-picked strawberries. But enough with the healthy stuff, this recipe is not at all healthy, but in moderation it is delicious! Also, since today is National Doughnut Day, I decided that this recipe will work perfectly to celebrate such a “fatty day”.

When I was in high school, I worked in a coffee and doughnut shop. One of my favorite doughnuts was an apple fritter, and the sour cream glazed, of course. I really love the texture of apples in a cinnamony, crunchy, soft doughnut, but since I had so many strawberries waiting to be eaten, I decided to create these delicious strawberry fritters. They taste even better than the ones from the coffee shop! No yeast is required for this recipe, just a simple batter with strawberries that gets deep fried in hot oil. I do not own a deep fryer so I created a simple one on a burner outside on my grill. I do not fry food often because I cannot stand the smell of a oily house, and I have adapted most of my recipes to use less oil and less frying. But this recipe must be fried for that crunchy and soft texture.


INGREDIENTS

  • Ingredients:
  • 2 cups flour
  • ½ cup sugar
  • 2½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon
  • 2 large eggs
  • ¾ cup milk
  • 2 teaspoons vanilla extract
  • 3 tablespoons butter, melted
  • 1 cup fresh strawberries, chopped
  • Oil, for frying
  • For the Glaze:
  • 3 cups powdered sugar
  • 5 tablespoons milk

INSTRUCTIONS

  1. Combine all of the dry ingredients: flour, sugar, baking powder, salt, and cinnamon.
  2. Whisk the eggs until pale in color, about 1 minute. Then add in all of the liquid ingredients, vanilla, milk, and melted butter.
  3. Add the dry ingredients to the wet ingredients and gently mix together. You do not want to over mix the batter, if there are small lumps in the batter that is good. Add in the strawberries and gently fold them into the batter.
