STRAWBERRY LEMONADE CAKE MIX BARS RECIPE

A delicious strawberry cake base with gooey lemon filling and creamy lemon frosting!

INGREDIENTS
For the base:

  • 1 package strawberry cake mix
  • 1/2 cup butter, softened to room temperature
  • 1 egg, slightly beaten
  • For the center/frosting:
  • 3 cups powdered sugar
  • 4 Tablespoons butter, softened to room temperature
  • Lemon juice
  • 3-5 drops yellow food coloring
  • 1 (8 ounce) package cream cheese, softened to room temperature
  • 2 eggs


INSTRUCTIONS

  1. Preheat oven to 350 degrees F.
  2. Spray a 9x13-inch baking pan with nonstick cooking spray; set aside.
  3. In a mixing bowl, combine cake mix, butter and egg until well combined, press in the bottom of prepared pan and set aside.
  4. In a large mixing bowl, combine powdered sugar and butter. Add enough lemon juice to form the consistency of thick frosting.
  5. Mix in cream cheese and yellow food coloring until smooth and creamy.
  6. Set aside 1 cup of mixture to use later as frosting.
  7. Add eggs to the remaining frosting mixture and beat until fluffy. Spread on top of cake mix in the pan and bake for 25-30 minutes or until the edges are golden brown.
  8. Let cool completely, then spread remaining frosting mixture on top.
