STRAWBERRY LEMONADE CAKE MIX BARS RECIPE
A delicious strawberry cake base with gooey lemon filling and creamy lemon frosting!

- 1 package strawberry cake mix
- 1/2 cup butter, softened to room temperature
- 1 egg, slightly beaten
- For the center/frosting:
- 3 cups powdered sugar
- 4 Tablespoons butter, softened to room temperature
- Lemon juice
- 3-5 drops yellow food coloring
- 1 (8 ounce) package cream cheese, softened to room temperature
- 2 eggs
INSTRUCTIONS
- Preheat oven to 350 degrees F.
- Spray a 9x13-inch baking pan with nonstick cooking spray; set aside.
- In a mixing bowl, combine cake mix, butter and egg until well combined, press in the bottom of prepared pan and set aside.
- In a large mixing bowl, combine powdered sugar and butter. Add enough lemon juice to form the consistency of thick frosting.
- Mix in cream cheese and yellow food coloring until smooth and creamy.
- Set aside 1 cup of mixture to use later as frosting.
- Add eggs to the remaining frosting mixture and beat until fluffy. Spread on top of cake mix in the pan and bake for 25-30 minutes or until the edges are golden brown.
- Let cool completely, then spread remaining frosting mixture on top.
