Broccoli Casserole
Chances are if you live in the midwest, you have had this dish before. You might even have the recipe already. It’s pretty popular in church cook books. But, moving to the East Coast I discovered that there is a whole world of people that don’t already make this! So I figured I would share my family’s version of it.
AND to give credit where credit is due, I actually did NOT make this. My sister Amanda makes this every holiday. And I am pretty sure that she makes it on most days (it’s her favorite). She agreed to let me take a picture (let’s get serious she is my younger sister so I’m not sure I gave her a true choice!). We love this dish. If you were feeling fancy you could add some cooked chicken pieces and make a complete dinner out of it. But it is a great, easy, yummy side dish.

Ingredients
- 2 16 oz packages chopped broccoli, steamed or boiled
- 1 egg slightly beaten
- 1/2 C Mayonnaise
- 1 small onion, chopped
- 1 can cream of mushroom (or chicken)
- 1 C grated cheddar cheese
- 1/4 C melted butter
- 1/2 package of herb stuffing mix (my family uses the Pepperidge Farm Bags)

Instructions
- Preheat oven to 350 Degrees
- Mix broccoli, egg, mayo, onion, soup and cheese and place in a 9x13 pan
- Mix stuffing and butter and sprinkle over broccoli
