PITAYA POWER SMOOTHIE BOWL

Bright pink in color, this pitaya power smoothie bowl isn’t all for looks. It’s filled with superfoods and nutritious ingredients that will brighten up your days as well. The based of the smoothie bowl is made with frozen pitaya, bananas and strawberries and it’s thinned out with coconut milk. Top it with your favorite fruit, nuts and seeds for a complete and delicious meal!

Happy Sunday ya’ll! How are you feeling? Ready for the week ahead or wishing you had one more day? There really does need to be a third day in the weekend. The day between Sunday and Monday needs to be a thing.


Zach and I had busy day today! Busy, but fun. We went to church this morning then looked at a house and stopped at Lowe’s to get some DIY supplies to make a donut wall for my sister’s baby shower next month. Then we headed to Jorgensen Farms (where Zach and I are getting married) for a floral consultation for the big day!

Ingredients

  • 2 packs pitaya
  • 1 frozen banana
  • 1/2 cup frozen strawberries
  • 1/2 cup dairy free milk I used almond milk
  • toppings: bananas strawberries, nuts, granola, chia seeds, other fruit, and more!

Instructions

  1. Add all ingredients aside from toppings in the blender. Blend on high for 1-2 minutes until thick and smooth. If you don't have a high powered blender it may take a little longer.
  2. Pour into large bowls and add assorted toppings. Eat immediately.
