Cinnamon Sugar Muffins

When I was younger, there was a muffin store in our local mall that my whole family loved. It was a small store, tucked into the corner near an exit and any time we were at the mall, my brother and I begged for some of their mini-muffins. Whether we were shopping for new clothes or dragged to the mall so our mom could get her hair done at the salon inside, we always left with a few little muffin treats.

I would always ask for the same two flavors: a mini sprinkle muffin (aka funfetti) and a cinnamon crumb cake. And man they we’re so stinkin good.


Ingredients
Muffins:

  • 1 ½ cups all purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • ⅓ cup unsalted butter softened to room temperature (or shortening)
  • ½ cup sugar
  • 1 egg
  • ½ tsp vanilla extract
  • ½ cup milk

Topping:

  • ½ cup sugar
  • 1 tsp cinnamon
  • 3 tbsp melted butter

Instructions

  • Preheat oven to 350 degrees fahrenheit
  • Stir together flour, baking powder, nutmeg, cinnamon, and salt in mixing bowl. Set aside.
  • Cream together sugar and butter until light and fluffy. Add in egg and vanilla extract.
  • Add in flour and milk, alternating between each until batter has come together
  • Fill a greased muffin tin (or cupcake liners) about ⅔ full.
