GLUTEN-FREE AVOCADO BANANA BREAD

This Avocado Banana Bread is such a healthy treat. I have a huge passion for banana bread. We make it in our home once a week and it has become a great family tradition. I have posted other Banana recipes before, some more traditional ones and flour less and gluten-free versions as well. I love them all, but I have to say that this Avocado Banana Bread is something special. It is very nutrient dense and the gluten-free flour makes it almost pastry like.

The Avocado replaces the butter used in more traditional recipes and gives this loaf a smooth, nutty flavor.  I especially like that this recipe is gluten-free. I mentioned in earlier posts that nobody in our family is allergic to gluten, but I like the way I feel after eating gluten-free, and my family loves the gluten-free recipes, which means double points (!). Eating gluten-free leaves me with a less stuffed and full feeling, and I’m able to maintain my energy levels throughout the day much better, without feeling tired. It’s such an ease on your digestion and well being. I just love it 🙂

As a runner I appreciate the high potassium content of this avocado banana bread, and it’s also such a healthy nutritious snack that my kids love!


Here is what you need for the Avocado Banana Bread:

1/4 cup coconut oil

1/2 avocado

3/4 cup cane sugar

2 teaspoons vanilla

2 eggs

1 1/2 cups gluten-free flour

1 teaspoon baking soda

2 large bananas or 3 small ones

Preheat oven to 350 degrees.

Grease loaf pan with non-stick spray. I use coconut spray from Trader Joe’s

In a bowl whisk banana oil and avocado until creamy.

Add banana and whisk for another minute.

Add eggs, sugar and vanilla blend until everything is really smooth and then slowly add gluten-free flour and baking soda.

Put batter into greased pan and bake for about 40 – 45 minutes or until inserted wooden stick comes out clean ( I personally think that’s always a great rule of thumb)

Avocado Banana Bread, and healthy Banana Breads in general are great for Breakfast, Brunch or afternoon snack. I even like to bring them as a hostess gift.
