KETO ZUCCHINI LASAGNA

A delicious alternative to a carb heavy meal. A nice comforting dish perfect for a cold winter day. The dish is easy to make and should be incorporated into your meal rotation.

Start by mixing the mozzarella, parmesan, and ricotta together to make the cheese mixture.

Slice zucchini into thin strips, lay out on paper towel and sprinkle with salt

Once most of the liquid has seeped out of the zucchini grill the strips for a few minutes on both sides.

Brown the pork and beef mixture in a sauce pan, then add the marinara sauce.


INGREDIENTS

  • 1 1/2 lbs ground pork and beef mixture
  • 1 Cup Ricotta Cheese
  • 1 1/2 Cup Mozzarella Cheese Shredded
  • 1/4 Cup Parmesan Cheese Shredded
  • 1 Cup Marinara Sauce
  • 2 Medium Zucchini Sliced


DIRECTIONS

  1. Slice the zucchini, avoid using the seedy center.
  2. Salt the zucchini, lay on paper towel to sweat.
  3. Brown the pork/beef mixture while the zucchini is sweating.
