- 2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. kosher salt
- 1/2 tsp. baking powder
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar, packed
- 2 large eggs1 tsp. pure vanilla extract
- 1 1/2 cups old-fashioned oats
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup milk chocolate chips
- 1/2 cup coarsely chopped pecans
- 1/2 cup shredded coconut (Kate used unsweetened, but I used sweetened)
- !/2 cup dried cherries
Directions
- Preheat oven to 350 degrees. Line cookie sheets with parchment or use a silpat.
- In medium bowl, combine the flour, baking soda, salt, and baking powder. Set aside.
- In large bowl, beat the butter and the sugars with an electric mixer until light and fluffy (about 3 minutes). Add one egg at a time, beating after each addition. Continue to beat until well combined. Add in the vanilla.
- Mix in the flour mixture into the butter mixture with mixer on low until combined. Stir in the oats, chips, pecans, coconut and dried cherries.
- Using a small cookie scoop, drop cookies onto prepared cookie sheets spacing about 2" apart.
- Bake in oven about 10 - 12 minutes, or until edges just start to brown. Remove from oven and allow to cool on cookie sheet for about 2 minutes before removing to wire racks to cool completely.
