CHOCOLATE-PEANUT BUTTER-BANANA LAYER CAKE

This milk chocolate layer cake is filled with peanut butter frosting, caramelized bananas, covered with mini chocolate chips, and topped with more frosting and Lindor truffles! The classic chocolate-peanut butter combo is heavenly and the bananas in the center are a perfect touch. Top it off with a creamy Lindor truffle, and you’ve got the cake of your dreams!

Believe it or not, this cake is actually intended for a 1 year old! Every year, I have an un-birthday for my daughter and my nephew is now joining in 🙂 His un-birthday was Thomas the Train themed, but he “requested” a chocolate-peanut butter-banana cake. When it came time for his party, this cake got a little dressed up with Thomas decor. There are a few steps in making this cake, but I tried to use shortcuts whenever I could, as well as the simplest, yet tastiest recipes. I think you’re really going to enjoy making and EATING this one!

You’ll start by making 3- 8″ round milk chocolate cakes. In a large bowl, combine the milk chocolate cake mix, chocolate pudding mix, water, eggs, and vegetable oil. Divide the batter among 3- 8″ round prepared pans. I spray them with baker’s cooking spray, but you can also use regular cooking spray and line the bottom with parchment paper. Bake according to the package directions, and then let them cool completely. Cover them individually in clear plastic wrap and transfer to the fridge for at least an hour. The cakes are much easier to work with when they’re cool!


Ingredients

  • For the cake:
  • 1 box milk chocolate cake mix
  • 1 box instant chocolate pudding mix
  • 4 eggs
  • 1 cup water
  • 1/3 cup + 1 tbsp vegetable oil
  • For the caramelized bananas:
  • 3 tbsp butter
  • 3 bananas, sliced
  • 3 tbsp brown sugar
  • For the peanut butter frosting:
  • 1 cup butter
  • 1 cup shortening
  • 8 cups powdered sugar
  • 1 cup peanut butter
  • 2 tsp vanilla
  • 5-6 tbsp water
  • For the ganache:
  • 3/4 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream
  • For the toppings:
  • 1/2 bag (6 oz) mini semi sweet chocolate chips
  • 9-10 Lindor milk chocolate truffles

Instructions

  1. Preheat oven to 350 degrees and prepare 3-8" round cake pans- spray them with baking cooking spray or grease them and use parchment circles at the base of each pan.
