AVOCADO TUNA SALAD SANDWICH

You may have seen my Guacamole and Tuna Stuffed Avocado that I posted recently. Oh my gosh it was good! So good that I wanted to recreate it as a simple sandwich! And I love that this tuna salad is just that – simple. Just 3 ingredients, so it comes together quickly with minimal chopping. And, it’s so healthy!
And remember, if you’re making this recipe with Island Trollers Albacore Tuna, you don’t want to drain off those tasty juices from the can; they’re the juices from the fish itself, not just plain ol’ water or oil. Those juices are loaded with Omega 3s. So, it might feel a little weird not to drain the tuna, but don’t do it.



Ingredients

  • ½ large ripe avocado
  • 1 can (7.5 ounce) Island Trollers Tuna, undrained
  • ¼ cup chopped green onion
  • 4 slices sandwich bread
  • lettuce leaves
  • sliced tomato

Instructions

  1. Place the avocado in a medium-size mixing bowl, and mash with a fork. Add the tuna (breaking up any large chunks), and green onion. Mix together until well combined. Season with salt and pepper if desired (I didn’t think it needed extra seasoning).
  2. Spoon tuna salad onto bread, topping with lettuce and tomato, and finishing with bread, making 2 sandwiches.
