Easy Brownie Sandwich Cookies

My son recently joined a new basketball league with a few of his scouting buddies. Which means he gets to go play basketball at the park with his friends- while the lil Missy gets left out. (Poor lil‘ Missy… ☹ ) On this particular Sunday, the house happened to be clean and there was a good football game scheduled. One of the other Dad’s was picking up my son from practice and we decided to invite them over afterward to have pizza and watch the game with us.

INGREDIENTS
- 1 package fudge brownie mix (13×9-inch pan size)
- 1 cup all-purpose flour
- 1 egg
- 1/2 cup water
- 1/4 cup oil
INSTRUCTIONS
- Preheat oven to 350°.
- In a large bowl, beat brownie mix, flour, egg, water and oil until well blended.
- Let batter stand 30 minutes.
- Drop dough by tablespoonfuls onto baking sheet, 2 inches apart.
- Bake 8-10 minutes or until set. Remove move cookies from pan to cool completely. You can use your spatula to flatten the tops of the cookies a bit if needed.
