CRISPY CAJUN SHRIMP FETTUCCINE

As I sit here enjoying a glass of Pinot Grigio after eating a full plate of this incredible fettuccine, I can’t help but think back to the last time I had a hangover. It was a few months ago, I’m not a big drinker, but I will indulge every once in a while and most importantly I am a very cheap date, one drink or two and I’m a goner. Good thing there’s no more dating for me, I’m sure hubs wouldn’t appreciate that. Seriously though, I cannot hold my liquor for the life of me. God knows I’ve tried, I mean occasionally I’ll go on a girls night out and have a couple glasses of wine, but I always go with the intent of drinking a lot because that’s just how mature I am. And it never happens. But every once in a while, even those 2 glasses of wine, or whatever I’m indulging in that night, go to my head and unfortunately, I suffer in the morning. My poor husband has to put up with me during these times, though not often, don’t get the wrong idea, but when they do happen and I get somewhat “tipsy“, well what can I say, I’m a very happy drunk and I start singing.



But you’re probably wondering why I’m telling you all this, or what if anything this has to do with this incredible fettuccine dish. No relation whatsoever. It’s just the glass of wine I’m enjoying that’s getting to my head. But moving on. This fettuccine is a very old recipe of mine, as a matter of fact I’ve shared this with you way back in 2012, and wanted a redo, so here it is.

Did I say it’s a favorite of mine? We’re talking crispy fried cajun shrimp on a bed of creamy fettuccine with a simple creamy sauce that really only requires 3 ingredients, unless you count the salt and pepper.

Ingredients

  • 8 oz fettuccine
  • 1 lb large shrimp deshelled and deveined
  • 1 tbsp cajun seasoning
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 cup chicken broth low sodium
  • 1 cup heavy cream
  • salt and pepper to taste
  • 1/2 cup Parmesan cheese grated
  • 1 tbsp fresh parsley chopped
  • US Customary - Metric

Instructions

  1. Cook fettuccine according to package instructions.
  2. Sprinkle the shrimp with 1 tbsp of cajun spice and toss well. Drizzle the flour over the shrimp and toss in a bowl to make sure each shrimp is covered in flour.
