Turkey and Cheese Cucumber Roll-Ups Recipe

Turkey and Cheese Cucumber Roll-Ups use fresh cucumber slices to replace high-carb foods like bread or tortillas. I can give these to my kids for a quick lunch or snack and know that it is a healthier option than most of what they choose at snack time.



Spread mustard on each cucumber slice.  Add slices of turkey on top. Break up turkey pieces to fit, if necessary. Next, break cheese slices in half on top of the turkey.
Starting at one end, roll up, trying to keep it tight (but not too tight, or everything will start to slide out).
Secure each with a toothpick, or add a few roll-ups to a long skewer.

WHAT YOU NEED

  • Cucumber
  • Turkey slices
  • American Cheese
  • Spicy Brown Mustard
  • Toothpicks- Cellophane Frilled
  • Bamboo Skewers


DIRECTIONS

  1. Thinly slice cucumber with a mandoline (if you don’t have one, use a vegetable peeler).
  2. Lay out cucumber slices.
  3. Spread mustard on each cucumber slice.
  4. Add slices of turkey on top. Break up turkey pieces to fit, if necessary.
  5. Next, break cheese slices in half on top of the turkey.
