BEST EVER BANANA CRUMB MUFFINS

You know that recipe growing up that your mom had that was covered in old smudges and stains, tiny little rips and creases from years of use? The one recipe your mom probably had committed to memory but still pulled out of the recipe box so you could follow along and help? These banana muffins with a cinnamon sugar crumb top are just that kind of recipe. Easy enough that you think they must be ordinary, but you take one bite and you immediately know these have to be in your regular baking rotation and will become a family favorite. With a crumb topping and tender cake, these banana muffins are an instant favorite.

These banana muffins with crumb top also have a second reason for appearing on the blog today. They mark the beginning of a series of posts leading up to the image I teased about on Instagram. Did you head over there and take a peek? You should. I’ll wait here… did you look? Yes, that picture is actually a Banana Split Ice Cream Burger! These banana crumb muffins are the “buns” before they get glazed in the homemade caramel sauce (you would fight someone over the last spoonful of this caramel sauce!) and … wait. I am not going to give away the farm on that recipe… there is so much more to come with it!

INGREDIENTS

• 1 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• 1 teaspoon vanilla extract
• 3/4 teaspoon cinnamon
• 1/2 teaspoon salt
• 3 bananas , mashed
• 3/4 cup white sugar
• 1 egg , lightly beaten
• 1/3 cup canola oil , melted
• Topping Ingredients:
• 2/3 cup packed brown sugar
• 1/4 cup all-purpose flour
• 1/4 teaspoon ground cinnamon
• 2 tablespoon butter

INSTRUCTIONS

1. Note: click on times in the instructions to start a kitchen timer while cooking.
2. Preheat oven to 375 degrees and spray a muffin pan with baking spray or line with 12 cupcake liners.
3. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder, cinnamon and salt.
