HEALTHY PEANUT BUTTER MUG CAKE

So with the whole lack of time thing, I thought I would make something that is super quick and easy. This Healthy Peanut Butter Mug Cake is AMAZING! It literally took me 3min to make. And it is so incredibly delicious. I made it using brown rice flour, honey and almond breeze so it is pretty darn healthy too. You could even make it vegan, simply by swopping the egg for a flax egg.

I know mug cakes have been a trend for quite some time now, but for some reason I never really tried them out. Man was I silly! They are amazing! This Healthy Peanut Butter Mug Cake is really a delicious snack or pick me up on a day that you really just wouldn’t have the time to bake a cake.



The one I made is probably big enough for two people to share (if you don’t mind sharing). I made it in my gigantic Starbucks mug, but any mug will do. Then all you do is combine all the ingredients, pop it into the microwave for 2min and then you have a delicious, satisfying cake. Amazing right?

Ingredients

  • 2 Tbsp Brown Rice Flour
  • 1/2 tsp Baking Powder
  • 1 Egg/Flax Egg
  • 1 1/2 Tbsp Melted Coconut Oil
  • 2 Tbsp Almond Milk
  • 1 tsp Vanilla
  • 2 Tbsp Honey/Maple Syrup (melted)
  • 2 Tbsp Peanut Butter
  • Dark Chocolate Chips (as many as you want)
  • Get Ingredients Powered by Chicory

Instructions

  1. Combine the flour and baking powder in a bowl and whisk together.
  2. Add in all the other ingredients (except the chocolate chips) and whisk until well combined.
  3. Pour the mixture into a large mug (or 2 small mugs) and top with chocolate chips.
