Best Recipes Cheeseburger Pie

My life can get hectic between working full-time and taking care of a toddler at home. I just don’t have a lot of time for cooking daily meals. Simple dishes that use basic ingredients are the key to my survival.

I generally do most of my cooking on the weekends and either freeze leftovers or refrigerate them for quick meals during the week. In the future, I’d really like to start cooking in large batches to build up a stash of quick freezer meals.


Perhaps low carb freezer meal recipes can be the subject of future posts? I just need to find the time to put that together as it would be really helpful for me as well as other. But I would definitely add in this easy gluten free low carb cheeseburger pie recipe.

We do have a large upright freezer which stores a lot of the venison that my husband gets during hunting season. He typically takes the meat to a local butcher to process into venison burger and sausage as I’m not a big fan of the steaks or stew meat.

Occasionally, I’ll get some cuts to make homemade venison jerky. On busy nights, I just saute the burger meat with some garlic and soy sauce along with some low carb vegetable like green beans.

Ingredients

  • 1 lb ground beef or venison burger
  • 1 cup onion chopped
  • 1/2 teaspoon salt
  • 1/3 cup coconut flour
  • 3 Tablespoons almond flour
  • 1 teaspoon baking powder
  • 1 cup unsweetened almond milk
  • 4 large eggs
  • 1½ cups cheese shredded
  • 1 tomato optional

Instructions

  1. Cook beef and onion in skillet until meat is brown, about 8-10 minutes.
  2. Spread beef mix into pie plate and sprinkle in salt.
  3. Mix together coconut flour, almond flour, baking powder, almond milk and eggs.
