I’ve had a bag of matcha green tea in my refrigerator for a few months. I use it occasionally to make a mock green tea vanilla latte. However, I haven’t had one in a while.

Looking to use up the matcha powder, I figured I’d try a new low carb drink. This time, I opted to make a keto matcha green tea smoothie.

To thicken up the smoothie, I added in some chia seeds. As the seeds absorb the liquid, the smoothie will thicken.

If you’d like a thicker smoothie, you can add in some glucomannan or xanthan gum. Glucomannan is my preferred low carb thickener.

Ingredients

  • 3/4 cup unsweetened almond milk or coconut milk
  • 1 tablespoon chia seeds
  • 1 teaspoon matcha green tea powder
  • 1/4 teaspoon lemon juice
  • 5 drops vanilla stevia drops
  • 2 tablespoons plain whole milk Greek yogurt use coconut cream for dairy free
  • 1/4 teaspoon glucomannon or xanthan gum (optional thickeners)
  • 1/4 cup crushed ice optional
  • US Customary - Metric

Instructions

  1. Combine all ingredients with blender until smooth. I find that a stick blender works best and is the easiest to clean.
