Skinny Vegan Sofritas Fajitas

Skinny Vegan Sofritas Fajitas are a perfect way to skinny up healthy Mexican food.

Very simple ingredients- Joseph’s Oat Bran Flax Whole Wheat Tortillas, high-protein crumbled tofu, chopped mushrooms, Trader Joe’s Chili Lime Seasoning + garlic powder.

Press the tofu block with paper towels, then break into 3 chunks and press again. This particular tofu is great because it hardly needs any pressing.


Ingredients

  • 1 pkg Trader Joe's High Protein Super Firm Organic Tofu pressed
  • 5 Joseph's Whole Wheat Oat Bran Flax Tortillas or sub
  • 2 cups mushrooms chopped
  • 1/2 white onion sliced
  • 1 green pepper sliced
  • 1 tbsp Trader Joe's Chili Lime Seasoning
  • 1 tbsp garlic powder
  • grapeseed oil for cooking or sub
