grapefruit gin fizz cocktail with rosemary garnish [weekend sips]

This Pink Grapefruit Gin Fizz Cocktail is the perfect drink for your next spring (and summer) soirée! This festive cocktail is bubbly, slightly tart, yet sweet and super refreshing!

I  L O V E using fresh juices in cocktails at home. I don’t tend to order them when we’re out though, unless the menu clearly states the juice is fresh. I’ve learned otherwise most of the time, my drink will be overly sweet with fake juice. No thanks.

But at Casa de Crews? All bets are off. This Grapefruit Gin Fizz Cocktail is the perfect bevvy for a spring weekend (ahem, hey Easter) outside as the weather warms up. Also, I’m just obsessed with the soft pink hue, with bubbles. Traditionally, a Gin Fizz gets its, ‘fizz’ from club soda, but I used a grapefruit flavored La Croix, because I had it on hand. You could use the Lemon-Lime La Croix, tonic water, or if you realllllly want to booze it up, a little topper of bubbly champagne, or prosecco! Alternatively, this would make one refreshing mocktail, if you omit the gin altogether.


INGREDIENTS

  • Rosemary Simple Syrup:
  • 1 cup water
  • 1 cup sugar
  • 8 sprigs of fresh rosemary
  • Grapefruit Gin Fizz:
  • ½ cup freshly squeezed grapefruit juice
  • ½ cup gin
  • Juice of 1 lime, freshly squeezed (about ¼ cup)
  • ¼ cup rosemary simple syrup
  • 12-ounces club soda, or flavored sparkling water (such as La Croix)
  • rosemary, for ganrish
  • sliced cucumber, for garnish (optional)

INSTRUCTIONS

  1. In a small saucepan, heat rosemary sprigs, water and granulated sugar over medium-high heat. Bring mixture to a boil and stir until the sugar dissolves.
