creamy beef noodle bake

It’s seriously so yummy and best of all, really easy! I love trying new recipes and I remember when I first made this several years ago, I did not have high expectations for it because I was not too familiar with egg noodles and the recipe did not seem like it would have much flavor. I found out real fast that I was wrong.

The beef simmers on the stove top in tomato sauce and some seasonings. While it’s simmering you cook up some egg noodles and then coat the hot egg noodles in a creamy & cheesy cottage cheese and sour cream sauce.

Layer it in your casserole dish and then top with some cheese, and then it cooks for just a short time in the oven.
This recipe is very versatile too. I have had several readers use some fresh onions, fresh garlic, chopped pepper and cook that with the beef mixture. Other readers have used a can of corn (drained) and mixed that in with the meat.



Add in whatever seasonings you prefer; Italian seasoning, basil, oregano, garlic powder, etc. The sky is the limit with this recipe. I have loved reading all your changes and substitutions, so if you have one please leave me a comment below. I love to hear from all of you.
My family loves the recipe as is but the beauty of this recipe is that it is so adaptable and versatile. I serve this with a bagged green salad that I add cherry tomatoes and chopped cucumber to. My kids LOVE green salad (weird, huh?!) so I always try and have it at the dinner table. You could also serve it with these slow cooker carrots or these 15 minute skillet carrots.

Ingredients

  • 1 lb ground beef
  • 1 can (15 oz) tomato sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1 package (12 oz) egg noodles
  • 3/4 cup sour cream
  • 2 cups cottage cheese 16 oz container
  • 2 cups shredded cheese I use Colby Jack

Instructions

  1. Heat oven to 350 degrees. Prepare a 9x13 baking dish and spray with cooking spray.
  2. Cook the ground beef in a skillet until no longer pink. Drain any excess fat.
  3. Add in the tomato sauce, salt, pepper, and onion powder into the meat and let simmer on low while you prepare the rest.
  4. Cook the egg noodles according to package directions [don't forget to salt the water!]
  5. In large bowl, mix together the sour cream and the cottage cheese.
