CHEESY CAULIFLOWER SOUP

So I’m making an attempt to shop less. Not a New Years Resolution, per se….but just an attempt. To use up more of what we have, to stop buying new things with the plan of using them someday, to continue the process of decluttering that I started over winter break. Because I realized something in the few days our house was really clean: having a clean house feels amazing.

And not just clean in a surfacy kind of way. But clean clean. Organized clean. Less stuff clean. And you know what? It all goes hand in hand. Having less stuff makes it easier to keep things clean. And having your stuff organized makes it easier to buy less…because you know what you already have! I know I’m a little late to the game on this. Keeping things clean and organized isn’t exactly a new concept.

But I honestly feel like life has been so busy since we moved in 5 years ago that the stuff has just been piling up. And now, suddenly, my world is opening up! In a beautifully decluttered kind of way.


Ingredients

  • 1 small head of cauliflower
  • 2 c. chicken broth
  • 1 small onion chopped
  • 1 tsp. minced garlic
  • 1/4 tsp. dried thyme
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 2 c. half & half substitute milk if desired
  • 1 c. shredded parmesan cheese

Instructions

  1. Cut cauliflower into small florets.
  2. Combine cauliflower florets in a medium saucepan with chicken broth, onion, garlic, and thyme.
